Directions
Remove the diffuser plate and preheat your YS640s to 400°.
Cut the shallot in half and grill until charred.
Dice the shallot and add to a bowl.
Use a microplane to grate in about one teaspoon of fresh garlic.
Use a microplane to zest a lemon.
Add about one teaspoon of Pit Fire Hot Sauce.
Add about one teaspoon Cattleman's Grill Trail Dust Seasoning.
Mix it all together.
Once combined, form butter in to a stick shape and wrap in saran wrap, cool until solid.
