All Things Barbecue invites you to join us in our test kitchen for an immersive experience in mastering grilling and smoking techniques. Led by our inhouse expert, Chef Tom, these hands-on classes are designed to equip you with the essential skills and knowledge needed to become a true grill master.

Whether you’re new to grilling or looking to refine your BBQ skills, Chef Tom will guide you through the techniques, tools, and insider tips that will take your grilling and smoking game to the next level. From temperature control and mastering different types of wood and charcoal to perfecting the art of smoking meats and vegetables, each class offers a blend of instruction and hands-on practice.

Dinner On The Grill Class

This class will be offered Friday, September 27th.

This grilling class provides an exceptional three-course dining experience, with each dish prepared entirely on the BBQ grill and paired with expertly chosen wines. Ideal for those looking to enhance their grilling techniques while enjoying a refined yet accessible menu, the class offers a unique opportunity to master both cooking and wine pairing. You’ll dive into the nuances of matching wines with grilled foods, combining flavor education with hands-on practice. Additionally, the course covers the essentials of wine tasting, focusing on the interplay between acidity, sweetness, and tannins, and how these qualities can complement or contrast the smoky, charred, or savory elements of grilled dishes. By the end, you’ll not only refine your grilling skills but also confidently pair wines to transform your BBQ meals into gourmet experiences.

Class Overview:

Smoked Salmon Crostini

Start the evening with a light and flavorful appetizer of smoked salmon served on toasted crostini. The rich, smoky taste of the salmon is balanced by the crispy texture of the bread, making it a perfect opening bite. Paired with a crisp white wine, this course sets the tone for a refreshing yet indulgent dining experience.

Grilled Pork Tenderloin & Chimichurri
The main course features tender pork tenderloin grilled to perfection and served with a vibrant, herbaceous chimichurri sauce. Accompanying the pork are two side dishes: a creamy Tahini Caesar Potato Salad, offering a modern twist on a classic, and grilled green beans, adding a fresh, slightly charred element. A robust red wine will be paired to highlight the depth of flavors and complement the savory notes of the pork and chimichurri.

Brûléed Banana Pudding
The evening concludes with a delightful dessert—banana pudding, finished with a caramelized, brûléed top. The sweet, creamy banana pudding, with its crunchy brûléed sugar layer, offers a perfect balance of textures and flavors to end the meal. A sweet dessert wine will be served to enhance the caramelized flavors of this indulgent treat.


Throughout the class, you’ll learn essential grilling techniques, tips for achieving perfect flavor pairings, and how to prepare each course with finesse. With the addition of expertly matched wines, this class promises a memorable evening of cooking, learning, and dining.


Whole Brisket Class

This class will be offered Saturday, September 28th.

Class Time: 10AM-1PM

This cooking class is a comprehensive journey into the art of smoking a whole brisket, from start to finish. Perfect for BBQ enthusiasts and those wanting to master the techniques behind achieving tender, flavorful smoked brisket, this class covers all the essential steps, with an emphasis on preparation and smoking.

Class Overview:

Introduction to Brisket Techniques

The class begins with an introduction to the different grades of brisket, and how to select the best brisket from the meat counter. You’ll learn the brisket basics including wood and pellet species, ideal temperature ranges, and how to determine when the brisket is done and ready to rest.

Brisket Trimming
One of the key components of preparing a great brisket is proper trimming. In this portion of the class, Chef Tom will demonstrate how to trim a whole brisket. You’ll learn how to remove excess fat, silver skin, and shape the brisket to achieve a great presentation.
Seasoning & Rub Techniques
After trimming, the next step is to season the brisket. You’ll explore different rub and flavor profiles that enhance the natural flavor of the meat.
Cooking the Brisket
With the brisket trimmed and seasoned, it’s time to get it on the grill. You’ll learn how to set the grill up for smoking, monitor the cook, and determine when the brisket is done.
The Little Things
With all the technology available to a cook, learn to visually identify when the brisket is ready to wrap, identify the "stall" and how to push through it, how to use feel to determine doneness, and more
Resting & Slicing
After hours of cooking, you’ll learn why letting the brisket rest is essential for flavor and texture. Finally, you’ll be shown how to slice the brisket, to achieve the perfect bite.

 

By the end of the class, you’ll have a full understanding of the entire process, from selecting, trimming, and seasoning the brisket to mastering the cooking process, and slicing and serving the perfect bite.

This class will leave you equipped with the skills to cook brisket like a pro, whether you're preparing for a weekend BBQ or an impressive feast for family and friends.
