Directions

1. Preheat your Yoder Smokers YS640 to 350°F. Divide the sausage into 8 (1/4 lb) balls. Press each ball in a rectangle shape to match the length of the cheese stick. Wrap the sausage around the cheese. Season with House of Q House Rub. Wrap the sausage with a slice of bacon.

2. Cook until the internal temperature reaches 145°F. Brush on the House of Q Rockin’ Red BBQ Sauce and continue cooking until the internal temperature reaches 165°F.
   
3. This is not your typical tailgate food. It’s another great recipe from our friend BBQ Brian Misko’s book, Grilling with House of Q. What you’re getting is basically a single serving BBQ fatty. It’s hot dog shape, and the fact it can be assembled ahead of time and held cold make it a great tailgating option.
