1 tbsp unsalted butter

1 1/2 tbsp flour

1 cup heavy whipping cream

4 oz white American cheese, diced

4 oz cheddar, grated

4 tbsp mayonnaise

1 tbsp prepared horseradish

Directions
For the Brisket
Slice the brisket thin and reheat in the beef stock.
For the Cheese Sauce
Melt the butter in a skillet and add the flour. Cook over medium low heat, stirring constantly to make the roux. Slowly add cream, stirring constantly. Whisk in the cheeses by the handful, until melted.
For the Horseradish Mayo
Whisk the mayonnaise and horseradish to combine.
To Build the Sandwich
Wrap your buns in wet paper towels. Steam in the microwave until softened.
Spread the horseradish mayo on the bottom bun. Pull slices of the brisket out of the warm beef stock and place on the bun. Spoon the cheese sauce over the brisket. Top with the top bun.
