Preheat your Yoder Smokers YS640s pellet grill to 450ºF-500ºF set up for direct grilling with GrillGrate panels installed over the fire box.
Slice the outer layer of the pineapple off of the flesh of the fruit, then slice the pineapple into discs.
Grill the pineapple with the grill lid over, just until lightly charred. Remove from the grill. Let cool. Slice around the core of each pineapple disc. Discard the core section, then give the remaining flesh a rough chop.
Blend the grilled pineapple, strawberries, lime juice, Noble Saltworks Maple Smoked Turbinado Sugar and water until smooth.
Combine the salt and sugar for garnish in a shallow container or plate. Rub the lime wedge on the rim of a glass. Rim the glass with the salt and sugar mixture.
Pour 1/2 cup of the puree into each glass, then slowly top off with Topo Chico. Garnish with a slice of lime.
