-
1- 2 tbsp Redia Farm Kansas Wildflower Honey, to taste
-
1 bottle brut rose wine
Directions
Preheat your Yoder Smokers YS640s Pellet Grill to 500ºF, set up with GrillGrate grilling panels over the fire box with the diffuser removed.
Halve the peaches. Remove the pits. Grill the peaches over direct flame with the grill door open until you have a little char, but they’re not mushy, about 5-8 minutes.
Combine the grilled peaches, vodka and honey in a blender. Add a few ice cubes to chill and thin.
Pour a couple of ounces of brut rose into a glass, then about four ounces of the puree, then top off with a couple more ounces of rose.

Recipe Highlights and Insights:
The Bellini, a delightful and elegant cocktail, originated in Venice, Italy, at the renowned Harry's Bar in 1948. Created by bartender Giuseppe Cipriani, this iconic drink was inspired by the vibrant colors in a painting by the 15th-century Venetian artist Giovanni Bellini. The original Bellini was a simple yet sophisticated blend of white peach puree and Prosecco, capturing the essence of Italian summer in a glass. Over the years, the Bellini has gained international fame, becoming a symbol of Italian aperitivo culture and a staple at brunches and celebrations worldwide. Its refreshing, fruity flavor and effervescent charm have ensured its place in the annals of classic cocktails.
