Ingredients
- 4 cups corn kernels (8 small ears)
- 4 eggs
- 1 cup heavy cream
- 1/2 cup buttermilk
- 4 tbsp sugar
- 4 tbsp unsalted butter, softened
- 3 tbsp flour
- 1 tbsp baking powder

Directions
- Preheat your Yoder Smokers YS1500s Outlander Grill to 500ºF, with the Yoder Smokers Wood Fired Oven installed and the damper door open.
- Place a Lodge Bakeware 15.5” x 10.5” Cast Iron Pan inside the Yoder Smoked Wood Fired Oven. Roast your corn until lightly charred and softened, about 18 minutes
Turn the grill temperature down to 350ºF. Slice the corn kernels off the cob. Combine all ingredients except maple syrup to the food processor. Blitz until broken down, but not smooth.
- Grease a Finex 10” CI skillet with butter or oil. Pour the filling into the skillet.
- Bake until the pudding reaches an internal temperature of 180ºF, about 25 min.
- Serve topped with a drizzle of the Tapped Maple Syrup.
