This Korean Barbecue Short Rib Burrito recipe is inspired by Chef Tom's time in Portland, eating at world famous food truck, Koi Fusion. He marinates and seasons Galbi, or Korean-Style Short Ribs, and combines it with kimchi fried rice and a cucumber pico de gallo inside of a warm tortilla.
