- 12 oz Cod fillets, divided into four equal portions
- 4 slices American cheese
- 1 cup Romaine lettuce, thin sliced

- Preheat your Napoleon P500RSIB-3 Gas Grill over low heat, with the Napoleon Cast Iron Griddle installed.
- Turn on the side burner and fill a Finex 10” Cast Iron Skillet with about 1/2” of avocado oil. Bring the oil temperature put to 375ºF-400ºF and reduce the heat to maintain that temperature.
To make the tartar sauce, place all ingredients in a bowl and whisk to combine. Hold cold in the refrigerator. Whisk the batter ingredients until smooth.

- Combine the panko and seasoning in a separate bowl and mix.
- Place a portion of fish in the batter. Let the excess drip off, then dunk in the seasoned panko to coat on all sides.
- Fry the fish until golden brown on both sides and the internal temperature reaches 135ºF, about 6-8m minutes. Place a slice of American cheese on top of the fried fish, then transfer to a wire rack inside the grill to keep warm.
- Toast the buns in the butter on the griddle inside the grill until golden brown and crispy. Remove from the grill.
- To build the sandwiches, place about two tablespoons tartar sauce on the bottom bun. Top with about one quarter cup shredded romaine lettuce. Place the fried fish filet and cheese on top of the lettuce, then cover with the top bun.
