Today on Tip & Techniques we'll be talking about direct grilling. Direct grilling is a popular cooking method that enhances the flavor of meats and vegetables by placing them directly over the flame. Perfect for quick-cooking items like steaks and burgers, this technique creates beautiful sear marks and a deliciously caramelized crust. To set up the grill for direct grilling, start by removing the diffuser plate or the diffuser access door, creating a smaller, more concentrated grilling area. This allows the flames to reach the cooking surface more efficiently, essential for achieving high temperatures and perfect sear marks. By maximizing the heat directly under your food, this setup ensures quick, even cooking and that delicious fresh off the grill flavor.

Push the baffle all the way in to concentrate the heat on the left side of the grill, directly above the firebox. This adjustment is crucial for directing the heat more precisely, creating an optimal zone for direct grilling.

Start the grill and set it to your desired temperature, ensuring it's preheated before you begin cooking. I typically set my grill to 450ºF, which is an ideal temperature for achieving a perfect sear while cooking meats quickly and evenly. Make sure to allow the grill to reach the set temperature before placing your food on the grates to ensure consistent and optimal cooking results.

This setup also allows you to move the food from the direct flame to the opposite side of the grill, enabling you to finish cooking using indirect heat. This technique is particularly useful for larger cuts of meat or items that require a longer cooking time, as it helps to prevent the exterior from becoming overly charred or burnt while the interior continues to cook through.
