Ingredients

2 tbsp olive oil
- 1 bunch (about 8) green onions, white and light green parts only
- 2 shallots, sliced thin
- 6 oz bacon, diced

1 tbsp Code 3 Spices Sea Dog Cajun Rub
- 3 cloves garlic, minced
- 1 lb mussels
- 1 can lager, we chose Miller High Life (after all, it IS the champagne of beers…)
- 1/4 cup butter
- 1/3 cup diced tomatoes

Salt, to taste
- Toasted, sliced baguettes, for serving
Directions
Preheat your Yoder Smokers YS640 to 450°F. Place a Lodge 12” Cast Iron Skillet in the cooker to preheat. Add the olive oil. Once the olive oil is hot add the bacon green onions, shallots and Code 3 Spices Sea Dog Cajun Rub, and cook, stirring occasionally, until the ham is crisp and the shallots have softened, about 10 minutes.
- Add the garlic, cook for one minute, then add the mussels and half of the beer and cook, covered, until the mussels begin to open, about 2 minutes. Uncover and add the butter and tomatoes. Continue cooking, stirring, until the butter has melted and the mussels have opened completely, a few minutes more. Taste sauce and season with salt as needed. Serve with the baguette.
