Here is a summer peach dessert from Chef Tom. Amaretto and dates combine to add almond and caramel flavors. Serve with ice cream.
Ingredients
- 4 peaches, halved, pitted
- 8 medjool dates, halved, pitted

John Henry’s Sugar Maple Rub Seasoning
- 6 tbsp butter
- 1 cup sugar, divided
- 1 cup amaretto
- 1/4 cup mint leaves, chopped
- 4 scoops vanilla ice cream
Directions
- Preheat your Yoder Smokers YS640 to 500°F. Place a Lodge Logic 12” cast iron skillet in the cooker. Toss the peaches and dates in John Henry’s Sugar Maple Rub Seasoning.
- Melt the butter in the skillet, then sprinkle half the sugar around the pan. When sugar begins to melt, place the peaches and dates skin-side down and cook until the bottoms of the peaches begin to brown, about 5 minutes.
- Carefully add the amaretto and the remaining sugar. Continue cooking and caramelizing for about one more minute.
- Turn the peaches over to brown the flesh sides, about one minute. Remove fruits from the skillet and garnish with mint leaves. Serve with vanilla ice cream.
