With a single deflector plate you can create a two-zone fire in your Classic Joe, or Large Big Green Egg. Sear your steak over the direct charcoal heat and then move it to the indirect side to finish cooking to your preferred internal temperature without burning the outside of the steak. With a pair of deflector plates you can turn your Classic Joe, or Large Big Green Egg into a perfect smoker or wood fired oven, giving you all the indirect surface you need to smoke ribs and brisket or bake pizzas, pies or other baked goods.
