1 lb thick cut bacon, sliced 1/4"
8 oz smoked cream cheese
1 cup (4 oz) sharp cheddar cheese

1 tbsp Heat Maverick’s Jalapeño Vice Hot Sauce
12 egg roll wrappers

For the Barbecue Ranch:

3/4 cup Buttermilk Ranch (recipe below)
3/4 cup Big Rick’s Original Bar-B-Q Sauce

For the Buttermilk Ranch Dressing:

1/4 cup sour cream
1/4 cup mayonnaise
1 tbsp buttermilk
2 tbsp parsley, minced
2 1/2 tsp fresh chives, minced
2 1/2 tsp fresh dill, minced
1/2 tsp lemon juice
1 clove garlic, minced
Cattleman’s Grill Lone Star Brisket Rub, to taste

Directions

Preheat the Fusion Griddle over medium heat. Cook the bacon until crispy. Remove from the griddle.
To make the filling, mix the softened smoked cream cheese with the crispy bacon, cheddar, 505 Fire Roasted Green Chiles, Meat Church Honey Bacon BBQ Rub and Heat Maverick’s Jalapeño Vice Hot Sauce in a bowl and stir.
To form the egg rolls, place about one quarter cup of the filling on an egg roll wrapper. Wet the edges of the wrapper with water, using your fingers. Roll the wrapper around the filling and press to seal. Repeat until you’ve used all of the filling.
On an induction burner, heat a few inches of vegetable oil in a large (6 quart) Lodge Cast Iron Dutch Oven to 375ºF.
Cook four egg rolls at a time until golden brown, about 4 minutes.
In a mixing bowl, whisk the ingredients for the ranch dressing.
Combine equal parts Big Rick’s Original Bar-B-Q Sauce and ranch dressing and whisk to combine.
Serve the Jalapeño Popper Egg Rolls with the Barbeceue Ranch for dipping.
